The distance map uses the Azimuthal Equidistant projection, which has the useful property that all points on the map are at proportionally correct distances from the center point. When you enter an origin city name, the projection is rotated to center on that city's coordinates.
The cool thing about this is that you can then compare the shortest distance to each destination city, drawn as a straight line. The dashed circles further help with the comparison between different cities.
